The Riserva 2008 Exclusive Collection GIOVANNI CAVALLERI is harvested only in the best vintages. The wine is made from 100% Chardonnay grapes, the 85% of the fermentation and aging take place in steel, the 10% in large oak barrels of 35 hl and, the remaining 5% in old barriques. The wine rests 9 years on the lees after a 4-week manual remuage.
